No, unfortunetly there are no options to be able to change the name that appears in the heading of the email with in the Microsoft Outlook for the iOS.

Outside of the stocked Apple Mail app. I have been using the Microsoft
Outlook for the iOS to be really fantastic. There is a lot of features
packed in to this wonderful gem. Is now my current and go to suggestion for
a good Mail app. Although, I would love to find another Mail app that does
more pwerful rules that would allow me to move incoming mail in to different
categories and folders. Outlook has something called the Focus and Others
which is a scaled down version what I'm seeking for but for now. I really
love this app.
